The core of the training school was extensive hands-on practical training supervised by the Training Team and Professor Serhiy Souchelnytskyi. On Monday 26th each student performed protein sample preparations from different fish tissues then started electrophoresis in the first dimension (isoelectrofocusing) which was run overnight. On Tuesday morning the isoelectrofocusing was finished and preparation SDS-gels for the second dimension was commenced. Electrophoresis in second dimension started in the evening and was run overnight. On Wednesday SDS-electrophoresis was finished, followed by fixation of gels and staining. Then samples for mass spectrometry analysis were prepared, including digestion of selected spots with trypsin. Next day tryptic digests were prepared and loaded on MALDI target plates. Next analytical trainings were performed in i) computer analysis of gels and ii) mass spectrometry identification of proteins. On the last day of the training school all activities were focused on reporting results, presentations of individual achievements by the participants and concluding seminar.

Scientist with a passion

Dr. Michał Janiak, Assistant Professor in the scientific group of Chemical and Physical Properties of Food is one of the laureates of a prestigious photographic competition organized by National Geographic Channel. Dr. Janiak’s photo depicting people praying for the victims of a terrorist attack in Ankara was ranked at the 6th place. Since the photo in focus was taken during his scientific internship in TÜBİTAK MARMARA Research Center, we could not be more satisfied with the success of Institute’s researcher.

Congratulations to the scientist with a passion on his great achievement!

XXIth century in Poland and other European countries has been marked by a clear division of the food market. On the one hand, we are surrounded by the ubiquitous supply of mass-produced standardised and unified global food. On the other, however, we may observe a growing interest of consumers and producers in traditional food, which stands out with its distinctive quality. Such phenomenon results from the increased awareness of the society, paying more attention to the prohealth functions of the food consumed.
Our conference will provide a forum for the exchange of opinion and expertise on the challenges and future prospects for traditional food. Bringing together specialists in different fields, we wish to discuss the possibilities of increasing the attractiveness of traditional food products through the transfer of innovation and research results.
The meeting is dedicated to i.a. scientists conducting research focused on developing and improving traditional food, as well as on introducing products of this type into a human diet. Entrepreneurs, local authorities, social organisations and other entities professionally related to traditional food will also considerably benefit from participation in this conference.

Appreciating a wide and appealing range of Polish traditional foods, we invite the producers to introduce their products during our conference.

Conference areas:

  • Traditional Grain Foods
  • Traditional Fishery and Meat Products
  • Traditional Vegetable and  Mushroom Products
  • Traditional Fruit and Olive Products
  • Traditional Dairy Products
  • Traditional Functional Food

TRAFOON project – Workshop 2016

Training Workshop

From tradition to innovation in buckwheat, oats and gluten-free ‑ strategies for SMEs in production, processing and marketing

DATE: 29/06/2016
VENUE: Novotel Warszawa Airport, Warsaw, Poland
LANGUAGE: English with Polish translation
FEE: free, but registration is required due to the limited availability of seats. In addition to the workshop we provide lunch, beverages and snacks throughout the day.

Welcome Message,

Farmers, producers, retailers, scientists and representatives of non-governmental organisations (consumers and patient organisations) will meet each other aiming at improvement of and innovation in traditional and local food production chains with specific focus on buckwheat, oats and gluten-free.

The EU project TRAFOON (November 2013 – October 2016) aims at the transfer of knowledge to small and medium size enterprises (SMEs) to strengthen their market position. SMEs in the food sector are increasingly under pressure due to developing open markets, increasing demand of standardized and price-competitive food products, increasing importance of large retailers, and challenges in obeying governmental regulations. This raises the risk of losing many local and traditional foods and processing techniques.

SMEs of traditional foods and active in local markets must therefore extend their skills in modern and competitive production and marketing. TRAFOON aims to support. The work package ‘Grains’ of TRAFOON involves ancient wheat species (e.g. durum and spelt), oats and buckwheat, and the application of sourdough and gluten-free production and processing. Buckwheat and oats have a long history as traditional crops, with an innovative perspective in gluten-free products.

During the first two years, scientists in TRAFOON have been in search internationally for the needs in representative national and local SMEs. During the workshop you will be informed about this ‘Inventory of Needs’, and you will be invited to discuss with the speakers (representing different stakeholders) about their ‘lessons to learn’ based on the ‘Needs’ and on specific ‘Cases’. Together we will create better mutual understanding, explore possibilities for innovation, and define strategic goals.

The ‘Strategic Research and Innovation Agenda’, the end goal of the TRAFOON project, is of crucial importance to the EU to enable further steps in European research and policy concerning traditional foods.
